Ingredients

  • 2 eggs
  • 1/2 cup spinach
  • 1/4 cup mushrooms, sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté mushrooms and spinach in olive oil.
  2. Beat eggs and pour into pan.
  3. Cook until set.
  4. Fold and serve.
